I love tomatillo sauce!! My favorite when going out to eat at a Mexican restaurant. Tomatillos are pretty easy to grow and this is the best thing to do with them in my opinion. I got this recipe from the cookbook entitled
Mex Tex by Matt Martinez. Check it out from your local library!
Simplicity Tomatillo Sauce
2 c. chopped onions
3 Tbsp olive oil
2 tsp fresh garlic, minced
3 Tbsp flour
1 tsp salt
1 tsp granulated sugar
2 c. chicken broth
1lb tomatillos, quartered
1/2 c. fresh cilantro
2-4 fresh jalapenoes
In medium saucepan, saute onions in oil on medium heat until clear. Add garlic, flour, salt and sugar.
Stir and cook for 2 to 3 minutes, being careful not to burn onions.
Add chicken broth. Add tomatillos, cilantro and whole jalapenoes.
Stir and simmer on medium for about 15-20 minutes or until jalapenoes are soft.
If you want it mild, remove jalapenoes before blending. The amount of jalapenoes you blend with the sauce affects its heat. Blend in a blender until smooth.
